Roasted Whole Cauliflower for Christmas

Last Updated on 7 March 2024 by Brisbane Livewell Clinic

Celebrate this Christmas with the easy-to-cook yet deliciously devoured roasted whole cauliflower. This one-pot vegan dish is full of flavour and nutrition. Let’s look at some nutritional values of the key ingredients.

Cauliflower keeps you full for a long time but doesn’t add too many calories to your body. One cup of cauliflower contains only 25 calories. It is full of fibres, minerals, and vitamins. The high fibre content of cauliflower plays a substantial role in improving the digestive system. It contains ample amounts of vitamin B6, vitamin K, vitamin C, folate, magnesium, calcium, potassium, manganese, and phosphorus. It’s a blessing to have so many valuable nutrients in one vegetable. Cauliflower also provides an essential nutrient named choline. It assists in keeping up the structure of the cellular membrane, helps in the transmission of nerve impulses, decreases chronic inflammation, and increases fat absorption. This nutrient works like brain food and helps to develop memory, learning, sleep, and muscle movement.

Cauliflower is a rich source of antioxidants that protect our cells from dangerous free radicals and inflammation. It also contains a plant-based essential nutrient called Sulforaphane that might help to reduce the risk of different cardiovascular diseases and diabetes.

Another star ingredient of the recipe is tahini. It’s a widely used Mediterranean side dish made with sesame seeds, extra-virgin olive oil, and a little bit of pink salt. All of these ingredients provide different health benefits. Tahini is rich in various vitamins, minerals, and anti-inflammatory monosaturated fat. It has many antioxidants named Lignin, which reduce the adverse effects of free radicals in your body. It may lower the risk of high cholesterol, type 2 diabetes, and cardiovascular diseases. Due to the high volume of antioxidants, sesame seeds in tahini demonstrate anti-bacterial activities. It’s a great plant-based source of calcium. It’s great for your teeth, hair, and bone health.
