Anaemia Relief with Millet Molasses Cookies

Anaemia is a nutritional disorder that affects more than 1.6 billion people around the world according to the World Health Organization. While Anaemia can be caused by many various factors, iron deficiency is the most common cause.

Anaemia occurs when the number of red blood cells in your body is too low. In turn, this will also mean that the amount of oxygen in your blood is lower than it should be as it the job of red blood cells to carry oxygen around your body.

If you have been diagnosed with Anaemia due to an iron deficiency, chances are you will be lacking a lot of energy due to a decrease in oxygen delivered to the body’s vital organs and tissue. You see, Iron is necessary for carrying oxygen in the haemoglobin of your red blood cells.

One surprising food that can be of great benefit to you when suffering anaemia due to an iron deficiency is Blackstrap Molasses. Blackstrap Molasses contains a variety of amazing vitamins and minerals including iron. In fact, approximately 1 tablespoon of Blackstrap Molasses contains 20% of the recommended daily intake of iron.

Blackstrap Molasses can be taken as a supplement by having it straight up off a spoon, or simply add it to your cooking and baking. These Millet Molasses Cookies are perfect as an easy snack or even as a breakfast option for those busy mornings.

Millet Molasses Cookies

Delicious healthy cookies bursting with vitamins and minerals

  • 1/2 Cup Millet flour
  • 1/2 Cup Buckwheat Flour
  • 1/4 Cup Rolled oats
  • 1/4 Cup Coconut sugar
  • ½ tsp Ground cinnamon
  • 2 tsp Baking powder
  • 1/4 Cup Pumpkin seeds
  • 3 Tbsp Coconut oil (melted)
  • 2 1/2 Tbsp Blackstrap molasses
  • 1/4 Cup Water
  1. Preheat oven to 180C
  2. Line a baking/cookie sheet with baking paper.
  3. In a large mixing bowl, mix the dry ingredients together.
  4. Make a well in the centre of the combined dry ingredients and add the coconut oil, molasses and the water. Stir with a wooden spoon until evenly mixed and mixture holds together.
  5. Roll the dough into small – medium sized balls, then place on lined baking sheet flattening slightly.
  6. Place in the oven and bake for 8 – 10 minutes or until golden.
  7. Set aside and allow to completely cool before serving.
